Le Chant is a wine project born in the Stellenbosch area, one of the most renowned wine regions in the New World, from the consolidated know-how of the Oddo family, a family of French origin that has been a protagonist in the wine sector for five generations. The winery is located precisely in Eikenhof, in the Polkadraai Hills area, where the Oddo's produce great wines using their prestigious French tradition, with a touch of modernity that is a child of the New World. In this adventure, the family is supported by Willie Joubert, estate manager, Schalk-Willem Joubert, technical director, and Petri Venter, consultant oenologist. As a logo choice, the Oddo family opted for the rooster, an animal symbol of France, choosing its song, 'le chant' in French, as the name for the project, to symbolise confidence, pride and determination, values that accompany the Oddo family's approach to production.

Within its own estate, the French-South African winery Le Chant grows the popular Bordeaux varieties Merlot, Cabernet Sauvignon and Cabernet Franc, alongside other French grapes Shiraz and Chenin Blanc, as well as Italian Sangiovese. The vines are planted on the gently rolling Polkadraai Hills, consisting mainly of decomposed granite. Here, the vines enjoy altitudes between 220 and 280 metres above sea level, southern and south-western exposures and cold oceanic winds that blow from both False Bay and, under certain conditions, Table Bay. The agronomic management then follows the principles of organic farming, while the winery approach is precise and modern. After manual harvesting, the grapes are vinified in white or red in stainless steel tanks, cement vats or old French oak barrels.

The production of the Le Chant cellar comprises just two labels, a white wine and a red wine, the first obtained from pure Chenin Blanc grapes, the second the result of the association between the classic Bordeaux blend and small percentages of Shiraz and Sangiovese grapes. Both turn out to be fresh and modern expressions, a meeting point between the Old and the New World.
